Cauliflower Rice

Cauliflower rice is not just a paleo staple side dish these days, and for a good reason. It’s rich with vitamins C, K, B and folate, and packs enough fiber to keep you on schedule, if you know what I mean. Using bone broth to cook the cauliflower in is a great way to add both some flavor and nutrients to this dish.



  1. Cut cauliflower into quarters or pieces small enough to fit into your blender.
  2. Fill blender with filtered water and pulse for about 50-10 seconds. Don’t pulse too long. Cauliflower should be small enough to look like rice. Do not blend into a puree.
  3. Heat a large cast iron skillet to medium heat. Add lard or ghee, onion and garlic. Sauté for about 1 minute.
  4. Add cauliflower rice and bone broth. Cook for about 5-6 minutes or until tender.
  5. Season with salt and pepper.
